ZaoZe Cafe & Market is both a Asian market and cafe, as well as a food production facility — using the produce and fish from our aquaponics greenhouse upstairs in products that we sell and use in our restaurants. Started during the pandemic, it provides a place to get a wide variety of unique grab-n-go Asian products, many of which are house made. Now that the pandemic is subsiding, we have expanded our in-store offerings, offer an a la carte lunch and seasonal 4-course take-out dinners. The market is open 10am until 6pm Wednesdays through Sundays, and a la carte lunch service is provided 11:30am – 2:30pm all days except Wednesdays. The cuisine of Tao Yuan is guided by fresh ingredients that are available locally, infused with Asian flavors and a mixture of modern cooking techniques, to produce food that is unique and delicious. Flavors vary from upscale versions of Asian street food, to some of the chef’s more sophisticated signature dishes. All dishes are served on small plates to allow each diner to sample several courses in a single meal.

Canopy Farms L3C is a mission-driven rooftop aquaponics greenhouse in Brunswick, Maine. Restaurant owners Cara and Cecile Stadler, along with greenhouse manager Samantha Altznauer have been developing Canopy Farms since 2016. This ambitious, innovative project is opened in 2020, and has been ramping up fish and produce production ever since. We sell our produce and fish at ZaoZe Market, the Portland Food Co-Op, Bath Natural Market, and will soon be part of the Portland Farmer’s Market this winter, offering fresh organically grown produce and fish (and hopefully strawberries) in the dead of winter.
